Optimising pistachio production with AI

In a world where efficiency and sustainability are no longer optional, the collaboration between Ireco Trading and Production S.A. and Wizata is a powerful example of how digitalisation can transform traditional industry.

Ireco, a family-owned pistachio producer in Luxembourg with decades of expertise, faced a real challenge: maintaining consistent final humidity in pistachios, which is a key quality metric, while keeping energy use under control. Raw pistachio moisture naturally varies, and standard roasting curves don’t always adapt to that.

Enter Wizata’s AI-driven platform. By building a digital twin of Ireco’s roasting line, they created a virtual replica that mirrors real-time production parameters. Thanks to this, an intelligent recommendation system continuously adjusts three critical “set points” in the process.

Multi-dimension results

The result? Optimised humidity stability and a remarkable 3 % energy saving, which translates to about €300,000 saved every year. But it’s not just about energy or cost. The system also delivers real-time monitoring, predictive alerts, and deep visibility into roaster health — empowering operators to react faster, reduce variability, and maintain excellent product quality.

As the model is scaled to multiple roasters across the facility, the gains multiply: consistent quality, lower waste, and continuous improvement.
